2 clumps of escarole salad
1 egg
1 tablespoon of grated goat cheese
2 tablespoons of breadcrumbs
1 garlic clove
parsley q.s.
1/2 cup oil

How to prepare:
Prepare the filling by mixing egg with breadcrumbs, grated cheese, garlic and parsley. Wash and clean the salad, open it in half and pour the filling into the escarole. Close the two half salad with a cotton thread. Boil 1.5 liters of water with ½ cup of olive oil and salt to taste. Salutè the escarole in the water.
