Typical dish from Cilento tradition, which represents a greeting for the future abundance and prosperity of food. The name of the dish comes from the Greek word “Kykeon” which means “mixture”: its preparation is in fact made by mixing together legumes and cereals.
How to prepare:
Soak in warm water legumes and cereals 12 hours before the preparation, using two separate bowls. Let them boil with plenty of water, in the following order: corn, wheat, barley, chickpeas, peas, beans and lentils. Add salt after coking. In a mortar prepare the mince with olive oil, garlic, parsley and salt. Beat until it gets creamy. Pour the mince in a pot and cook it over low heat. Put the soup of grains and legumes in a plate and pour over the hot mince with toasted bread.
