Fresh anchovies 300 gr.
2 salted Menaica anchovy fillets
1 garlic clove
potatoes, peeled 200 gr.
wild chicory 400 gr.
fresh beans 200 gr.
1 bunch of wild fennel
oil q.s.
salt q.s.
How to prepare:
Saute garlic and chopped onions in a deep pan with oil. When brown, lower the heat and add the Menaica anchovy filet, until completely melted. Add the finely chopped fennel, cover with water and bring to a boil, add the potatoes and after 2 minutes chicory and broad beans (both clean and shelled). Cook slowly, having the soup always covered by water. When the vegetables are almost ready, season with salt and add the filet of fresh anchovies. Cook for 5 minutes and serve hot.
